living the “fresh life” day 16

I’ll admit it, I took a little while longer getting out of bed this morning, I didn’t have to wake up and make sure my breakfast was digested before a morning exercise routine so I had an extra 30 minutes, sometimes that is all it takes to feel “rested.” Since I have been routinely exercising I have been sleeping sooo much better; this is coming from someone who was waking up nightly 3 or more times and having a hard time falling back asleep. No meds, just the rest that my body feels it needs… priceless!!

Today was my “personal” do something for Shelley day. I know to some this might seem a little like pampering but you know what I think it is an important thing to do for yourself. It doesn’t have to be anything big and fancy, it could be taking time for a leisurely bath, but for me today it was all about my hands and feet and “Lincoln park at dark!”

Daily Cuisine:

Breakfast: Mango Stuffed Honey Wheat French Toast with Raspberries and Banana Ricotta Cheese

What an amazing breakfast!! I loved the mixture of the mango flavor and the French toast all wound up with a dab of ricotta cheese on each forkful!

Lunch: Tofu Caesar Salad with Romaine Lettuce, Sun-Dried Tomato, European Cucumber & Caesar Dressing

I thought I would try the “veggie “dish today and was very pleased with the tofu Caesar Salad. The tofu was grilled and extra firm which was a nice contrast to the crisp lettuce. Great Crunch and flavor!

Dinner: Pineapple Chicken Teriyaki with Parsnip & Pear Puree and Grilled Yellow Tomato

OK, well, I thought I would “try” the parsnip & pear puree as something kind of new… I use parsnip a lot of times in my soups but have never tried it by itself.. Note to self, don’t try again. For those of you who have never had parsnips they have a very distinct flavor and just mashed too much for my palate, stick to flavoring soup.

Snack: Chicken Apple Sausage with Horseradish Dip & Cucumber Spears

I loved this little snack it was both sweet and savory and the horseradish dip added just a little extra afternoon POW!

Dessert: Carrot Cake with Pecans and Cream Cheese Frosting

What a great way to end my day with a little slice of heaven, I must admit the cream cheese frosting was my favorite part..

Another work out Wednesday has come and past! And now it’s time for a little “Shelley time.” And then back for some much needed cleaning…

Daily Cuisine:

Breakfast: Toasted Granola with Pineapple & Honey Almond Ricotta Cheese

Loved the combination of granola pineapple and ricotta cheese, it was sweet and crunchy and a wonderful way to start my day.

Lunch: Asian Flank Steak on Whole Wheat Roll with Szechuan Style Slaw and Peanut Sauce

This sandwich was another “finger licking good” sandwich, the flank steak was juicy and with the addition of the Szechuan style slaw and peanut sauce it was a tangy meal.

Dinner: Turkey Chili Con Carne with Whole Wheat Fettuccine Pasta and Steamed Asparagus

I wasn’t sure about this meal when I looked at it, I just wasn’t sure it was going to be enough to fill me up, however after eating it slowly and mindfully I found that I was quite satisfied with it. I do love chili on a cold night and the chili had the right amount of sweetness and zip.

Snack: Mini Veggie Egg Rolls with Peanut Sauce

Egg rolls used to be a favorite of mine. So I was happy to have these little veggie egg rolls for my snack. I think I’m overloading it with peanut sauce today though lol.

Dessert: Key Lime Cheesecake

Nothing like a little taste of sweet and tart to remind me of summertime.

The week started with the ole “one two POW” of a work out with Danielle. I am always so thrilled with the way I feel after working out and knowing that my little muscles are getting stronger and stronger.

Daily Cuisine:

Monday January 16th

Breakfast: Artichoke & Brie Cheese, Parsley Omelet with Seven Grain Toast

What a great way to start the week and day with this delicious creamy omelet and toast.

Lunch: Classic Cobb Salad with Grilled Chicken, Turkey Pastrami, Tomato, Cucumber, Romaine Lettuce & Ranch Dressing

I have to be honest I was not a fan of today’s salad. I guess I am not a huge pastrami fan, it really seems to salty and fatty of a meat to me turkey pastrami or not it just didn’t sit right with me. Well I suppose there is always going to be something that we aren’t going to like right?

Dinner: Grilled Chicken Breast with Roasted Tomato Alfredo Sauce with Chipotle Whipped Cauliflower Puree and Herbed Barley Pilaf

Tonight’s chicken was plump and juicy and I loved the flavor of the Alfredo sauce with a kick and seemed to have some tomatoes in there.

Snack: White Bean Hummus with Pita Chips

I really enjoyed this extra creamy white bean hummus. Normally I would have eaten this with at least 5 pita chips so I was pleased that after taking my time to enjoy it I realized that 2 did the trick just fine, after all it is called a “snack” not a meal!

Dessert: Boston Cream Pie

I’m sorry I didn’t get a photo of this dreamy cake, when I took it out the chocolate stuck to the top and the rest was very hard to transfer to a plate but it was very delicious and creamy, loved the vanilla taste in the “cream.”

Tuesday January 17th

Breakfast: Whole Wheat Cinnamon Waffles with Fresh Banana & Pineapple Cottage Cheese

I toasted the waffles and they were so crispy and light, I loved the hint of cinnamon mixed into the batter. The Pineapple Cottage Cheese and Banana were just the right amount to fill me up.

Lunch: Grilled Wild Mahi Mahi on Whole Wheat Ciabatta Bread with Lettuce, Tomato & Thousand Island Dressing

This sandwich was truly finger licking good! The Mahi Mahi was very light and flaky. I toasted the bread and added some cucumber and red onion to the lettuce and tomato to make a wonderfully flavorful sandwich. One of my fav’s for sure!

Dinner: New York Strip Steak with Mango BBQ Sauce with Haricot Vert and Sautéed Mushroom Medley

Steak! I was so happy to have a dish which I really enjoy, I’m a steak kinda gal so this New York Strip was fork tender and the Mango BBQ Sauce was a great addition. Of course the Mushrooms and Haricot Vert were also quite tasty.

Snack: Mini Sweet Potato & Turkey Shepherds Pie

To be honest, I really wasn’t sure about this little snack, however upon taking my first bite and tasting the mixture of the sweet potato and turkey it was like a little thanksgiving in a bite size.

Dessert: Coffee Coconut Brownie

Divine, Delicious, Decadent… the 3 d’s used to describe the Coffee Coconut Brownie… No more words needed!

Yesterday’s meals had to be the golden day of my two weeks so far! I really have enjoyed the meals sent from THE fresh diet so far and look forward to what the next few weeks brings… How is your meal planning coming?

So what’s the skinny on THE fresh diet?

I love to cook, I love to entertain and I love to eat, sometimes I get confused between eating to live and living to eat, depending on what is going on in my life! I was well on my way with a healthy makeover in 2010 and then 2011 hit and pow I hit a wall, well not literally but figuratively it was just NOT my year and at the end of December I looked at myself and had a heart to heart and vowed to take back my life in 2012.

I jumped on THE fresh diet’s bandwagon and many of my facebook buddies have asked me what in the world is this and where does that delicious food come from? So I thought I’d do a post on the “skinny” of what I know so far about the company.

THE fresh diet is the next best thing to having a chef in your home who cooks healthy cuisine. I am NOT looking at this as a “diet” per say we all know I think that is a 4 letter word… however, I do hope to lose weight, inches and get back control while eating this food.

The company is based out of Miami, however my food comes from a kitchen in Brooklyn New York and is sent down every night on a refrigerated truck and then magically appears at my home each morning before breakfast. All I have to do is take it out of the refrigerated bag and put in the fridge until each meal time.

The calorie intake is between 1200 and 1400 calories a day, for women, which consists of Breakfast, Lunch, Dinner, Snack, and Dessert. Yes, I did say dessert! Which I believe is important so one does not feel deprived…

How is this all done you ask? It’s as simple as a click! All one has to do is go to their website and sign up. I called the company as I have a few pretty distinctive food allergies and wanted to make sure they could accommodate me. I had a great conversation with one of their sales team members and set up everything with her. However, it is very easy to get all set up virtually. You would enter your weight and height and from that point you would begin to choose what you would like for your meals. You have a choice of 4 options per meal, which I love. There is even a veggie choice for those who do not eat meat. Another cool feature that they offer is a “dislike” basket so if you have a food you don’t like or like me a food I’m allergic to you would put that in the dislike basket and if you attempt to order anything that has a smidge of that ingredient it will alert you! How great is that?

Sunday is the “day of rest” for most, for me… not so much, I have my “little lady” to hang out with today and tune to all of her needs as well as my hubby. It was a bit tricky making their meals, but I did it! Two weekends in a row! Can I get a Woot Woot!

Daily Cuisine:

Breakfast: Breakfast Burrito with Scrambled Eggs, Sautéed Bell Peppers, Cheddar Cheese on Spinach Tortilla

I loved this morning meal, loved the spinach flavor in the wrap to the peppers in the eggs!

Lunch: Smoked Mozzarella Salad with Whole Wheat Penne Pasta, Baby Spinach, Roasted Bell Pepper, and Parmesan Dressing

I’m going to say it, this wasn’t my favorite meal from THE fresh diet, the food was good and fresh it just wasn’t for me. I do love smoked mozzarella but the whole salad tasted a little blah to me. If I went out to a restaurant and had this served to me I would have been disappointed too.

Dinner: Grilled London Broil with Raspberry Chipotle Sauce with Cashew and Orange Brown Rice Pilaf and Roasted Green Asparagus

Loved the fork tender London Broil! The Chipotle sauce was spicy! THE fresh diet chefs really like spicy!! I loved the hint of orange and cashew in the pilaf.

Snack: Chicken Sate with Thai Peanut Sauce

I always have loved Chicken Sate, so I was pleased with this late afternoon pick me up, and again the Thai peanut sauce-Spicy and full of POW!

Dessert: Pina Colada Cheesecake

I’m thinking that this smooth cheesecake with the smallest hint of coconut has to be my new favorite!

Friday started with a morning workout with Ryan and today he brought with him a new torture device piece of exercise equipment…

It was a tough workout, lots of legs and core today; something told me my abs were going to be feeling this! I sure huffed and puffed a lot! However, I keep telling myself patience, Rome wasn’t built in a day, and I didn’t get so out of shape in a day…

Daily Cuisine:

Breakfast: Mushroom & Turkey Sausage Egg Bake with Fresh Pineapple

I really enjoy the egg bakes; each day that I have had them they have tasted a little different. Today’s with the mixture of mushroom and the tangy turkey sausage was a delightful blend. And the pineapple added that small bit of sweetness.

Lunch: Grilled Steak Salad with Romaine Lettuce, Tomato, Red Onion & Horseradish Dressing

The grilled streak was fork tender and a great addition to the salad which was completed with the zesty horseradish dressing.

Dinner: Fillet of Halibut with Spicy Orange Sauce with Nine Grain Pilaf and Roasted Cauliflower

The halibut had a mild taste so the added spicy orange sauce was an amazing mixture of soft and mild with a bit of kick. I don’t believe I have ever had nine grain pilaf before which had a bit of a nutty taste, and the roasted cauliflower was delicious to complete the meal.

Snack: Mushroom Crowns Stuffed with Sautéed Garlic Beef with Tomato Sauce

I am amazed how 2 mushroom crowns stuffed with sautéed beef were so satisfying! The sautéed beef was quite tangy.

Dessert: Chocolate Pudding Topped with Toasted Almonds

Who doesn’t love a little chocolate every now and then? So I was pleasantly surprised with the creamy blend of chocolate pudding and toasted almonds. It was another great way to end the day.

The week is flying by, I headed out for some “personal” me time today, one of the things I promised myself I would do on my way to wellness, once a week do something just for me!

Today I had a facial… It has been a longgg longgg time since my face has been cleaned by anyone other than myself and to be honest I was dreading it a little bit. My esthetician who I have used before gave me a wonderful cleaning.

For those of you don’t know what a facial is… A facial cleans, exfoliates and nourishes the skin to promote clear, well-hydrated skin. It is sometimes called a “deep-cleansing facial” or “deep-pore cleansing” facial because of extractions; this is the part I dread. However there is a reprieve and a wonderful face, neck and shoulder massage that relaxed me. It was like the old Calgon “take me away” commercial, so relaxing I almost fell asleep!

When you get to be my age… it is important to keep you pores as clean as possible unless you want them to clog and enlarge, which I don’t! My skin has been one of my assets that I have been blessed with so I am going to try very hard to keep up with this and take care of it and keep those wrinkles away!

Today’s cuisine:

Breakfast: Fresh Fruit Salad with Cantaloupe, Blueberry, Papaya, Banana, Pineapple & Cherry Yogurt

All of the fruit was mouth watering and sweet, I especially was happy to see the half a banana as part of the mix and the yogurt was just sweet enough not to be to sweet. I’m curious what kind of yogurt The fresh diet uses, plain or greek? It didn’t have the zip that greek yogurt has so I’m apt to say just plain yogurt they mixed cherry in with.

Lunch: Blue Cheese Salad with Baby Corn, Hearts of Palm, Romaine Lettuce & Sun Dried Tomato with Basil Vinaigrette

This salad had two of my favorite foods, Blue Cheese and Hearts of Palm so how could it go wrong? The Basil Vinaigrette was quite pungent and gave the right balance to the salad.

Dinner: Veal Cutlets with Port Mushroom Marsala Sauce with Sauteed Button Mushrooms and Sauteed Button Mushrooms

By now you should know I adore mushrooms so I was glad the amount that was in my dinner. The Veal Cutlet was moist and the Marsala Sauce had a hint of pepper.

Snack: Fresh Mozzarella, Honeydew and Cherry Tomato Antipasto Skewer

I adore the mixture of mozzarella and honeydew the sweet and moist flavors come together and the cherry tomato added a little bit of sourness. I drizzled a bit of balsamic vinegar over each squewer and they were complete!

Dessert: Cherry Vanilla Cheesecake

Each night I look forward to my flavor of the day cheesecake, what I love about the cheesecake is the butter and nutty flavored crust and contrast of the sweet fillings. Devine!

It was a work out kinda day preparing for Ryan! I bent and stretched and moved muscles that haven’t moved in I shudder to think months… maybe years… But knowing that with each hard breath I take I am getting stronger and stronger helps.

While shopping at the food store today, yes, I still have to do that, I do have a family who also has to eat even though my food is deliciously prepared for me. I checked out what some of the “new foods” were that I have tried over the past week. This was actually kinda fun to see what they looked like as I have previously looked over them not interested, or knowing what they were.

I also worked on my Wellness Makeover log to store all of my info in to chart my progress for the year.

New foods:

Swiss Chard: Beta vulgaris subsp. cicla), is a leafy green vegetable often used in Mediterranean cooking. While the leaves are always green, chard stalks vary in color.  Chard has been bred to have highly nutritious leaves at the expense of the root (which is not as nutritious as the leaves).  Chard is, in fact, considered to be one of the healthiest vegetables available and a valuable addition to a healthy diet (not unlike other green leafy vegetables).

Chard has a slightly bitter taste and is used in a variety of cultures around the world.

Fresh young chard can be used raw in salads. Mature chard leaves and stalks are typically cooked or sautéed; their bitterness fades with cooking, leaving a refined flavor which is more delicate than that of cooked spinach.

In my case it was the leaves that were cooked in with Oyster Mushrooms and Mozzarella in a Breakfast Egg bake on Tuesday.

Mango: The mango is a fleshy stone fruit belonging to the genus Mangifera, consisting of numerous tropical fruiting trees. The mango is native to India from where it spread all over the world. It is one of the most cultivated fruits of the tropical world.

Mangoes are widely used in cuisine. Sour, unripe mangoes are used in chutneys but they are typically eaten fresh.

The mango was introduced to me as it was part of the Caribbean Mango Sauce on my Grilled Mahi Mahi on Saturday. And again, on Tuesday in a Pineapple Mango Chutney with my Roasted Pork Dinner.

Rutabaga: The rutabaga, swede (from Swedish turnip), turnip or yellow turnip (Brassica napobrassica, or Brassica napus var. napobrassica, or Brassica napus subsp. rapifera) is a root vegetable that originated as a cross between the cabbage and the turnip. The roots are prepared for food in a variety of ways, and its leaves can also be eaten as a leaf vegetable.

On Tuesday evening’s dinner I had the Rutabaga mashed as a potato which is a common was it is cooked in Sweden and Norway.

Today’s cuisine:

Breakfast: Oregano, Zucchini & Mozzarella Cheese Quiche with Fresh Pineapple

Flavorful and full of zest and protein, what a great way to start the day!

Lunch: Mushroom Soufflé & Gruyere Cheese Panini on Whole Wheat Ciabatta Bread

I loved this little Panini, I have a Panini grill which I chose to warm it up and to make it extra crunch. I loved the flavors of the mushrooms and the gruyere cheese! This was a very enjoyable lunch!

Hors D’Oeurve: Roasted Tomato & Mozzarella Whole Wheat Bruschetta

Bruchetta is one of my favorite foods, however looking at the two pieces of baguette I was a bit skeptical because I usually eat ohhh, well let’s just say a LOT more than two, however, after taking my time to cut it up. *which I have never done. I enjoyed it very much; the mixture of zesty tomatoes and the mozzarella after being warmed for a half a minute was ever so tasty!

Dinner: Fillet of Chilean Sea Bass with Citrus Chipotle Sauce with Sun-Dried Tomato Couscous and Haricot Vert

I’m a Chilean Sea Bass kinda gal, I love the fleshy white meat of this fish it has such a delicate flavor, and mixed with this “pow” Citrus Chipotle Sauce was a great complement! And the sides of Sun-Dried Tomato and Haricot Verts were also very tasty. It was a very zesty meal!

Dessert: Apricot Cheesecake

As always a wonderful little treat to end my day and I added a few blueberries.

Getting everything back on track I know starts from the inside out, and it is a combination truly of body, mind and soul; I’m going to be doing a post on my Wellness binder to give you hits it you’d like to make one too.

It was another crazy day for me between doing my own work and stepping in to help my husband with some things and moving furniture around and organizing. I’m so thankful that I have a painter who I work closely with on a lot of jobs who is able to help me from time to time when I need him for things in my house that aren’t paint related! Because when I start something I want it done…. NOW! So waiting was not an option for me…

My exercise today came from moving lots and lots of stuff around and running up and down 2 flights of stairs, though I’m sure Ryan would really want more of a cardio work out this is what I could get in.

Today’s Cuisine:

Breakfast: Ruby Swiss Chard, Oyster Mushroom & Mozzarella Egg Bake with Fresh Pear

New food of the day came at me right up this morning with the swiss chard in my eggs; I wasn’t really sure what it was but knew it was a green veggie as I pass “over” it at the food store. The quiche like breakfast was savory and I loved the mushrooms, the contrast of the sweet pear was a nice combo.

Lunch: Tuna Burger on Whole Wheat Bun with Cucumber and Avocado Salsa

The tuna burger was very “meaty” and full of flavor, I was happy to have a sandwich type of lunch to mix it up a little bit today. I’d have to say my favorite part of the sandwich was the cucumber and avocado salsa it was very zesty and added a little pop to the sandwich.

Hors D’Oeurve: Avocado & Cream Cheese Stuffed Baby Tomato

These little stuffed tomatoes were a pure delight this afternoon when I needed a quick pick me up after running up and down the stairs!

Dinner: Roasted Pork Loin with Pineapple Mango Chutney with Carrot & Rutabaga Mash and Honey Glazed Beets

OK I lied the “new food of the day” was not only the swiss chard; I have never had rutabaga either. The pork was tender and the pineapple mango chutney added just the right amount of moisture and flavor. I enjoyed the carrot and rutabaga mash and I loved the honey glazed beets; another recipe I look forward to getting!

Dessert: Apple Cinnamon Cheesecake

I would have to say this was the most favorable of the cheesecakes that I have tried. Loved the apple-cinnamon!

Hard to believe this completes week one of my “fresh life.” Look forward to continuing on and trying everything out as I get healthy from the inside out…

Why is Monday always like a rat race? I’m not sure, maybe it’s from picking up the slack of the weekend and going from a restful 4 to a speeding 10+; well that is what my day seemed like… I went from one thing to another and squeezed my eating in when i had the “time” which really isn’t like me.. But before I knew it, it was dinner…

I had my first Zumba/Combo workout with Danielle which was fun, I did smile a little bit! Which I don’t usually do when I’m lifting weights with Ryan… It’s hard to breathe and smile…

My Daily Cuisine

Breakfast: Southwestern Style Scrambled Eggs with Fire roasted Corn, Fresh Salsa, Bell Peppers, Pepper-Jack Cheese and Multi Grain Toast.

The eggs were full of taste, loved to combo of the few veggies that were included and the extra toast was a great way to prepare for my morning.

Lunch: Fresh Antipasto Salad with Grilled Bell Peppers, Grape Tomato, Prosciutto Ham, Fresh Mozzarella Cheese and Balsamic Dressing.

To “beef up” the Salad a little bit I added a lot of fresh lettuce, I am finding a new love for Prosciutto Ham. The contrast of the zippy flavor and the soft Mozzarella Cheese was a delight!

Snack: Red & Yellow Tomato with Goat Cheese & Fresh Basil

I love cheese, so I thought i’d give Goat Cheese a try, I tried it once before and wasn’t a fan but thought let’s give it another go… So…  The tomatoes were tasty and fresh and i love the mixture of tomato and basil but i would have rather had Mozzarella with it; Goat cheese has a very distinctive taste, kinda of tart yet creamy. I think i’m going to stay away from it, still not a fan!

Dinner: Citrus Marinated Beef Stir-Fry with Black Barley Pilaf and Exotic Mushroom Ragout

I’m a stir-fry kinda gal, so I was looking forward to trying this. The Citrus flavor was very mild. The Black Barley was my “new food of the day” which i found to be a little crunchy and nut like, and the Mushrooms were a good complement to the Stir-fry.

Dessert: Cherry Vanilla Cheesecake

My end of the day sweet sensation, thank you Fresh diet!
