Organizing in now part of my Wellness Makeover

paperworkI was  “stuck”  in a rut for a while,  last year was very tough for me due to my panicking and basically that and taking care of everyone over myself took over my life. Then in January I decided it was “time” to take back my life and work on myself from the inside out. I’ve been eating healthy and exercising, driving day by day and expanding my circle to overcome my panic in the car.

Over the past year I started many projects at home and abandoned them in the middle.. abort.. abort.. abort… You know what I mean? Now as part of my “wellness makeover” and reclaiming my life I am working on getting myself out of my “paper rut” and finally cleaning “everything” up. And when I say “everything” I mean “everything.” I paperwork galore;  20 years of IEP’s for Hadley, numerous medical reports, therapists reports,  and many papers and projects from Sarah’s school years and through college. You can only imagine how this has been eating at me since I am a pretty organized lady.. But in all fairness to myself I kept most of this “downstairs” where no one could see it. So now it’s time to get down to business and get to work… Here is a little preview of my “work ahead of me”

  • Hadley’s IEP binder/files and school & medical papers from age birth-20 (that is a ton in itself)
  • Sarah’s School files from Pre-K through College
  • My scrapbook “hysteria” for lack of better work nightmare might be better
  • Our Manuals
  • Our files
  • Our Garage, which “houses” 10 years of a nonprofit paperwork which I think I can get rid of lots now, “hello shred it!”
  • Linen Closet
  • Conversion of Sarah’s closet-My closet (this is what you do when kids move out, and cry!)
  • Bathrooms organization
  • Our front closets organizations
  • My new way of shopping “extreme couponing” or at least trying via coupon binder
  • My “recipe” binder -collection of 2 years healthy recipes

This should keep me busy and out of a rut for a while, who has time to panic, it’s time to organize! Woo Hoo! Stay tuned for my step by step posts and maybe I will inspire you with your “re-organizing”.

Living the fresh life Days 32 ~ 40

food photo's from February 4-12the, Days 32-40It is hard to believe that I have been “working” THE fresh diet for a month now! I am so proud of myself for sticking to it especially when “life” has come up as it always will and I didn’t deviate from “the plan.” Exercise, Healthy eating, working on driving and clearing up my panicking too. So cheers please!!

From this point on instead of photographing and reviewing food I have already eaten on THE fresh diet, I am going to journal new foods and review them, I thought this made more sense and apparently there are new items added to the menu’s weekly so there is still much to review.

New foods:

Lunch:

Seared Tofu Wrap with Alfalfa sprouts, Snow Peas, Watercress, Baby Lettuce & Soy Dressing: This will definitely be added to my “favorite” list. There was so much flavor and crunch, a mixture of sweet and savory nothing as great as that, except maybe balsamic vinegar LOL.

Grilled Fish Taco with Brocco-slaw and Creamy Jalapeno Cilantro Sauce: I had seen photo’s of this dish before and I couldn’t wait to try it! And I was not disappointed. The piece of fish was a nice size and the brocco-slaw and jalapeno sauce just made it complete. Felt like I was in California!!

Snack:

Balsamic Grilled Eggplant with Fresh Mozzarella & Basil: Balsamic Vinegar has to be one of my favorite additions to just about anything so when i tried this I had to add a little more and a zip of Truvia. Basil, Mozzarella, and Balsamic Vinegar-great flavor!

Chocolate Chip Bread Pudding: First of all to have something sweet in the afternoon was a pure treat! I usually get the savory snack. I was so excited to give this a try, I love bread pudding and yes i love chocolate chips, in fact I was so excited I forgot to take my photo until i was halfway done, ohh no! But I did get it before the last bite.. LOL yes, another favorite to add to the list!

Ginger Poached Apple with Mascarpone Cheese: Another sweet snack, not chocolate but the apples were sweet and delicious with a hint of ginger and a dollop of Mascarpone Cheese. With a cup of tea-wonderful afternoon treat!

Dinner:

Veal Cutlet with Port Mushroom Marsala sauce with Brown Rice with Pecans & Scallions and sauteed Button Mushrooms: It is so nice to try different meats when on a “healthy living makeover” sometimes it is easy to get stuck in the chicken and fish rut to the point where you’d think you were going to sprout either feathers or gills, so the change to Veal was a welcomed change. Loved the mushroom Marsala and extra sauteed mushrooms with rice, such a decadent meal I felt like I was eating at a restaurant.

Chicken Cordon Blue with Ham and Swiss Cheese with Nine Grain Pilaf and Roasted Cauliflower: I have a little confession to make, I have never had Chicken Cordon Blue… I know it seems like a dish a lot of folks have at parties, back in my day, but I always opted for the “other” dish. But I found this dish very flavorful between the salty ham and the creamy Swiss cheese it was a great filling!

Grilled Chicken Breast with Ginger Miso Sauce with Maple Glazed Turnips and Green Beans with Walnuts & Garlic: What a nice chicken breast! This was the first time in a month that I believe I had what looked like a whole chicken breast. Loved the Miso sauce but the real winner of the dinner was the maple glazed turnips, YUM!!

Living the “fresh” life day 27

January 30, 2012 food collage

Yesterday was the first day in what is going to be a very stressful week for me and my family. My husband is having surgery on Wednesday and I will be happy when this is all over! No food from THE fresh diet for me on Wednesday because it will be impossible to eat it at the hospital where we will be spending the whole day. I’m already “thinking” of what I will have to eat in place of my “fresh” life.

Daily Cuisine:

Breakfast: Hawaiian Style Oatmeal with Pineapple & Toasted Coconut Flakes

I knew I was working out with Ryan this morning and I guess I didn’t think about that when I was ordering my food because I usually try and get an egg dish for the protein, however, the oatmeal was so delicious!

Lunch: Thai Turkey Burger on Whole Wheat Ciabatta with Sauteed Bok-Choy & Peanut Sauce

This lunch goes up there on my favorites!! I really enjoyed everything from the meaty turkey burger to the peanut sauce and I added some lettuce and red onions for extra zip!

Dinner: Thai Coconut Curry Chicken with Bamboo Shoots and Broccoli Bits with Braised Baby Carrots and Oregano Broccoli Mash

I usually like curry dishes but tonight’s dinner had such a small amount of curry that it was almost extinct and the rest of the flavoring just didn’t do it for me.

Snack: Mini Zucchini Quiches with Cheddar Cheese

These little morsels were not only cute but very tasty, these are a must for a party appetizer!

Dessert: Pineapple Cheesecake

I’m going to have to stop commenting on the cheesecakes because there really isn’t anything more to be said, they are like a slice of wonder to end each day I have one!

The end of the week seemed to come faster then it began. Before I knew it, it was Saturday… Where is the time going? It is hard to believe that next week is February and I will have completed my first month living the “fresh” life!

Next week will be a challenging week for me as my husband heads for surgery and then helping him mend his way back to health over the next few weeks. It is times like this that I am happy that I am working with THE fresh diet, as my food is one less thing for me to worry about, and since I know I am an emotional eater, if it is not a part of my food of the day right now, I will NOT eat it! So here’s to a week of extra will power with the extra pressure all around. Wish me luck!

Daily Cuisine:

Friday

Breakfast: Fresh Fruit Salad with Mango, Red Grapes, Pineapple, Honeydew, Apple & Cinnamon Apple Yogurt

I really enjoy the little twists and additions to the yogurt like today’s apple and cinnamon!

Lunch: Prosciutto Ham Salad with Romaine Lettuce, Sweet Potato, Broccolini, Grape Tomato & Blue Cheese Dressing

Sweet potatoes in my salad was a little surprise, it was a nice contrast to the tart blue cheese!

Dinner: Beef Kebab with Peppercorn Brandy Sauce with Sweet Potato Hash and Garlic Creamed Spinach and Arugula

The Kebab was very tender and I loved the peppercorn brandy sauce! Also, the sweet potato hash was a nice side dish as was the garlic creamed spinach and arugula, felt like a dinner at a steak house!

Snack: Artichoke Bottoms Filled with Herbed Cheese

This was the second time I had this snack, I do love the meaty artichoke bottoms however I could live without the herbed cheese.

Dessert: Grilled Pineapple Rings Topped with Raspberry Infused Mascarpone

This dessert was a great substitution for my regular cheesecake, you must be wondering “what no cheesecake for Shelley tonight?” That’s right, I’m sure the flavor of the day had strawberry in it, and strawberries and myself do not mix well, huge allergy.

Saturday

Breakfast: Banana Maple Muffin with Red Grapes & Coconut Ricotta Cheese

This continental breakfast was very tasty and satisfying, I loved the coconut in the ricotta and the banana maple muffin smelled sooo good coming out of the microwave!

Lunch: Chicken Salad with Spinach, Mango, Orange Segments, Pine Nuts & Raspberry Vinaigrette

Wonderful mix of flavors!

Dinner: Chicken Collette with Aged Cheddar Cheese and Fresh Tarragon with Chipotle Spiced Whipped Sweet Potato and Steamed Brussels Sprouts

I don’t believe I have ever had anything like the Chicken Collette, it was very tasty with the aged cheddar mixed in the middle and I was happy to see the little Brussels Sprouts; they are one of my favorite veggies.

Snack: Roasted Baby Tomato Stuffed with Gorgonzola Cheese

I do love gorgonzola cheese so this was a tasty little snack mid day!

Dessert: Mango Cheesecake

Not much to add to the wonders of cheesecake today!

Sunday

Breakfast: Hazelnut Espresso Whole Wheat Muffin with Fresh Honeydew & Raspberry Cottage Cheese

Second day of continental breakfast, today’s muffin again smelled great and tasted even better!

Lunch: Chicken Salad with Tomato, Bell Pepper, Hearts of Palm, Pine Nuts, Baby Lettuce & Honey Dijon Dressing

My favorite part of this salad today, and mind you I love hearts of palm and pine nuts… but the Honey Dijon Dressing A+!

Dinner: Pork Medallions with Caribbean Mango Sauce with Herbed Cauliflower Mash and Green Beans with Walnuts & Garlic

Growing up we never ate pork, I have tried it a few times now and I just don’t think I’m a pork kinda gal, however the Caribbean Mango sauce was wonderful and the garlic in the green beans added a lot of flavor to the whole meal.

Snack: Vegetable Crudities with Baby Carrot, Broccoli, Celery & Blue Cheese Dip

Veggie Crudities not much to say here..

Dessert: Creamy Banana Cheesecake

Creamy is an understatement… 1-800-I’m in love!

Yesterday was a catching up day around my house, I did some work on my husband’s office design, worked on my “other” site and answered and wrote lots and lots of email.

Today I wanted to take a moment to talk about THE fresh diet and customer service. In this day and age when customer service means so much and the word of the customer and buzz goes so far I am always impressed when a company puts their money where their mouth is. My husband is a huge believer in customer service, it is one thing that he prides himself on as a business owner and he has hundreds of stories of praises of his helping customers every which way he can. So I am always impressed with other companies who do likewise, this is what I have come to know of people from THE fresh diet in the last month. As you know last Friday my food didn’t show up; yes, it was a human error and this week I had a little problem with my dinner one night, both times I received wonderful support from many helpful people. This was not a one person generic email “thank you blah blah blah apology”. Both instances I received email from more than one person and even a phone call! A phone call, when was the last time you received a personal phone call to apologize and assure you the error would not happen again? These are the fine folks from customer support at THE fresh diet, so I might have had a few bumps but I applaud them for stepping up to bat!

Breakfast: Fresh Fruit Salad with Cantaloupe, Raspberry, Papaya, Banana, Pineapple & Banana Cottage Cheese

I enjoyed the fresh fruit mixed with the banana cottage cheese.

Lunch: Roasted Artichoke Hearts & Four Cheese Panini on Whole Wheat Ciabatta

I happen to have a Panini maker so I gave my lunch a little regrilling and the crispness of the Whole Wheat Ciabatta mixed with the melted cheeses and artichokes was delicious.

Dinner: Fillet of Wild Snapper with Sun-Dried Tomato Pesto with Roasted Baby Squash and Grilled Portabella Mushrooms

I don’t believe I have ever eaten snapper, I do enjoy fish, however I’m allergic to shellfish so that puts a big damper in the fish department for me so trying the snapper was a good “new thing.” I enjoyed the fish very much it was a “meaty” piece and had a mild taste, so the mixture of the tomato pesto was very nice and also the squash and portabella mushrooms completed the meal nicely.

Snack: Hazelnut Espresso Muffin

Not too much to say about this little morsel of “yum” except just that!

Dessert: Coconut Chocolate Pudding

To end the day on a chocolate note… bliss!

The day started with a “killer” of a work out with Ryan, I am so glad that no one is around to hear me pant or scream in pain; the last time I remember working this hard I delivered my daughters! But, you know what they say, “that which doesn’t kill you, only makes you stronger!” I better be pretty darn strong sometime this spring!

I did my “driving exercises” and managed to get myself to go a little “further” so I took the time to stop and get my haircut, this long hair was really getting on my nerves; I’m so not a long hair kind of girl, some people just have the face for it, every time I try to grow it out, I come to the same realization, Shelley you are NOT a long hair lady! Hello bob nice to see you again!

Today marks the first day of week 4! Woo Hoo!

Daily Cuisine

Breakfast: Yellow Squash & Parmesan Cheese Quiche with Fresh Watermelon

Everyone knows by now how much I adore quiche! The flavor from the parmesan gives this quiche an extra special touch and love the squash mixed in too!

Lunch: Blue Cheese Salad with Baby Corn, Artichoke Hearts, Alfalfa Sprouts, Enoki Mushroom, Romaine Lettuce & Balsamic Vinaigrette

Bring on the Blue Cheese, Artichoke Hearts and Mushrooms, I’m in heaven! Plus the crunch crunch!

Dinner: Tender Beef Fillet with BBQ Bourbon Sauce with Red Bell Pepper Orzo and Steamed Broccoli Rapini

One thing about THE fresh diet that I am truly enjoying is all of the dressing and sauces; I look forward to finding out some of these recipes and sharing them with all of my friends. Tonight’s BBQ Bourbon Sauce was no exception, it was so tangy and a wonderful complement to the Beef filet.

Snack: Sweet Potato Chips with Fresh Guacamole Dip

Guacamole and Sweet Potato chips, what’s not to like about that? The guacamole had a hint of lime and tobacco sauce, lots of zip this afternoon!

Dessert: Peach Cheesecake

I’m wondering if I really need to write anything more about the wonderful slices of heaven I have for dessert?

Ohhh my days seem to be moving faster and faster, between helping my sick daughter and my husband with some things for his office and my “stuff” I’m running behind… However the good news is I’m keeping up with my healthy eating and exercise routine, so here, here!

Daily Cuisine:

Monday

Breakfast: Roasted Poblano Pico de Gallo Omelet with Queso Blanco & Whole Wheat Toast

I do look forward to my energy breakfasts on Mondays before my work out and do usually enjoy my omelets from THE fresh diet however today I was not that crazy about the Queso Blanco sauce as it had a hint of Goat Cheese, which I am not a fan of. So that kind of made the omelet a little less satisfying than usual. However if you like Goat Cheese I’m sure you would love this!

Lunch: Philly Cheese Steak Whole Wheat Wrap with Sautéed Bell Pepper & Mozzarella Cheese

I don’t know why I was expecting something a little on the lines of a “Jerry’s sub” on a Whole Wheat Wrap, ohhh I know I was dreaming a little, but the wrap was full of zest from the bell peppers. Not Jerry’s but a good choice!

Dinner: Turkey Meatloaf with Baby Farmer Carrots and Orange Glazed Baked Yams

I really enjoyed the turkey meatloaf it had a mixture of veggies in it that one could see just from looking at it and the carrots were nice and sweet as well as the yams which had the smallest hint of orange, it was definitely an orange colored meal!

Snack: Mushroom Crowns Filled with Pesto Chicken

I adore pesto! So these little morsels were very enjoyable and quite meaty!

Dessert: White Chocolate Chip Cappuccino Cheesecake

Oh thank heavens for cheesecake, I am so enjoying all of the different flavors that THE fresh diet makes, I’d have to say this one is one of my fav’s with a hint of white chocolate.

Breakfast: Honey Roasted Granola with Fresh Diced Pineapple & Passion Fruit Yogurt

Yum Yum Yum! Loved the crunch, loved the pineapple, loved the mixture of the three!

Lunch: Ponzu Seared Tofu Salad with Tomato, Hearts of Palm, Enoki Mushroom, Baby Lettuce & Honey Ginger Dressing

This salad was so full of zip and crunch, and the dressing is most definitely one of my favorites thus far, I even had everyone in my family try a little! I need this recipe!

Dinner: Fillet of Tilapia with Provencal Sauce with Sautéed Button Mushrooms and Roasted Green Asparagus

The fish “looked” good, and I have had the tilapia before I believe however tonight it just didn’t sit right and the taste was a little “off” the mushrooms and asparagus were both very tasty!

Snack: Tropical Dried Fruit with Pina Colada Yogurt

I certainly loaded up on yogurt today which is a good thing and I enjoyed the dried apricots and prunes!

Dessert: Blueberry Cheesecake

Another wonderful cheesecake with a twist of blueberries.

Helping a sick child while living the “fresh” life

Well the weekend was a little bit of a bust, not with my healthy eating but because my little lady was not feeling well, so this meant she spent a good deal of the weekend on my lap while throwing up; so not fun. I really hate when she gets sick because it is sooo hard for her to tell us what is wrong, what hurts due to her disability. A lot of times we just guess and usually end up taking her to the doctor. But with the weekends snow that came to visit leaving the house really wasn’t an option unless it became an emergency. I spent the night on the couch to make sure I could hear her when she woke up at night as I didn’t want her to choke if she was to vomit while sleeping, so you can imagine how tired I was on Sunday. I was happy that my food was here and that was one less thing for me to have to worry about.

Saturday

Breakfast: Fresh Fruit Salad with Cantaloupe, Red Grapes, Papaya, Banana, Pineapple & Banana Ricotta Cheese

Loved this breakfast, all of the fruit was juicy and sweet.

Lunch: Turkey Breast Salad with Avocado, Golden Apples, Baby Lettuce & Raspberry Vinaigrette

The turkey in the salad was tender and full of flavor; the apples were a nice contrast with a bit of sweetness however the avocado was a little mushy.

Dinner: Smokey Lemon Rubbed Salmon Fillet with Creamy Herbed Quinoa and Lemon Roasted Green Asparagus

I was so pleased with the delicious salmon fillet in tonight’s dinner; it was the best thing about the day’s meals so far.

Snack: Mushroom Crowns Stuffed with Creamy Broccoli

My late afternoon snack today was little mushroom caps filled with chopped broccoli, they were tasty but just not what I needed “today” wished I had something with a little more flavor.

Dessert: Maple Cheesecake

Thank you fresh diet for this divine maple cheesecake!

Sunday

Breakfast: Breakfast Burrito with Scrambled Eggs, Sautéed Mushrooms, Pepper-Jack Cheese on Whole Wheat Tortilla

I was excited to wrap my mouth around this wonderfully smelling breakfast burrito; it tasted as good as it smelled!

Lunch: Gorgonzola Cheese Salad with Red Grapes, Candied Walnuts, Boston Lettuce & Tart Cherry Vinaigrette

I’m a dairy girl and I love all things dairy, milk, cheese, and yogurt, did I mention cheese? And Gorgonzola is definitely one of my favorites so this salad had the right amount of punch and zing; loved it.

Dinner: Cajun Rubbed Grilled Skirt Steak with Butternut Squash Puree and Roasted Bell Peppers

Wellll, I will say it, unfortunately there was a bit too much fat on my skirt steak to enjoy, I was actually to scared to eat it all after cutting a good bit of the fat off, I kept thinking this can’t possibly be good for me. I do enjoy the veggie purees “of the day” and the butternut squash did not disappoint.

Snack: Prosciutto Ham Wrapped Asparagus Tips

My first piece was delicious, I enjoyed the sweet and savory flavor wrapped around a few asparagus tips, however my second piece had a bit of fat in the prosciutto that I must have ripped a good portion of away. I never was a prosciutto eater so I don’t know if this is a natural way that it usually comes or really was just a fatty piece.

Dessert: Sautéed Pineapple with Key Lime Yogurt Topped with Toasted Coconut Flakes

The evening was “saved” by this wonderful little yet sinful dessert; I loved all of the flavors especially the toasted coconut flakes.

So, how was your weekend? And can someone please give me a heads up about prosciutto, is it always fatty?

Disappointment and Will Power

I woke up this morning to the sound of the front door opening and hearing a “zipper” open and close… Hmm, I quickly popped out of bed as that is usually my cue that my food for the day has arrived from THE fresh diet. However, I don’t usually hear the bag being opened and then put down… I immediately knew something was “wrong.”

Upon heading downstairs and looking outside I was correct yesterdays bag had not been picked up and this was most definitely not today’s bag. So where was my bag? What happened to “my” food?? I was getting a little freaked because Danielle was going to be here in a few hours to “kick my butt” and I needed my morning protein to help my muscles do their thing.

I immediately hopped onto my email to see if I had gotten any mail, and nope, no phone calls… no mail… so I started trying to get in touch with anyone I could to help me… I figured the company had to open early as all deliveries are supposed to be to client’s homes by 6 am, but nope they open at 8, so I popped onto facebook and started writing. “Help, where is my food?” In the mean time I knew what this meant, I was not having THE fresh diet for my cuisine today! This was definitely one of those “make it or break it” kind of days starting like this. It would have been sooo easy for me to say “I’ll take the day off” and start again tomorrow, after all I knew there were Frito’s in my house… But I have come so far in the last few weeks and really don’t want to take that step backwards… So protein shakes for breakfast it was; Greek yogurt and fruit and skim milk. Love!

Danielle came and we worked out… Zumba and resistance training and the little endorphins did help me feel a little better.

I spent a lot of the day writing to everyone at THE fresh diet about “my food” and what happened as I really didn’t want this to ever happen again! Somehow my food was made, made its way to the DC Metro area but then somehow didn’t make it onto my delivery truck. I know, I know human error, it does happen, but it is just a pain in the neck when it does… I will throw in here that everyone I spoke with and wrote to at THE fresh diet was very supportive and helpful in finding out what happened and hopefully making sure this doesn’t happen again. And I am so happy and pleased with myself that I didn’t “fall off the bandwagon” or run to the Frito’s during the day and kept with my small plates of food that I tried to mimic what I have been eating these last few weeks. Dinner was going to be the hardest, but I had remembered a wonderful recipe from Canyon Ranch that I love made with Tofu and stir fried veggies in a delish sauce and I complimented that with mashed cauliflower which I also love and later had a small portion of ricotta cheese and pineapple mixture for dessert. I know at some point I am going to have to go back to cooking and eating myself so this wasn’t a bad thing, just a bit disappointing but happy with my will power!
