Day two back with THE fresh diet proved to be a very satisfying and tasty day, it brought back some of my favorites…
Breakfast
Asparagus & Cheddar Cheese Quiche with Fresh Pineapple
I loved the sweet and savory meal! Loved the creamy quiche and the pineapple was sooo sweet!
Lunch
Grilled Wild Mahi Mahi on Whole Wheat Ciabatta Bread with Lettuce, Tomato & Thousand Island Dressing
This is by far one of my favorite lunches from TFD! It is a good size and therefore very satisfying, I will admit I do add a few more veggies to it to really give it some zip I add red onions and for a bit more crunch a few cucumber.
Dinner
New York Strip Steak with Mango BBQ Sauce with Spanish Style Brown Rice and Sauteed Mushroom Medley
I am a meat kinda gal so I always looked forward to my evenings with New York Strip. The piece was very satisfying although it does look small, again we are sooo used to looking through our “American eyes” which means our eyes are much bigger then our stomachs. The Spanish Brown rice had a little bit of zest and well we all know I love mushrooms. I must request the recipe for the Mango BBQ sauce to share with you because it has just the right bit of sweetness and yet has a good kick!
Snack
Mini Sweet Potato & Turkey Shepherd’s Pie
I have to admit today I wasn’t really looking for a savory snack, I wanted and craved my “sweets” but it was Shepherd’s Pie which did have sweet potatoes on top so I did get a lil taste of sweets.
Dessert
Honey Almond Cheesecake
I sooo look forward to watching the 8pm TV shows with my cup of tea and evening cheesecake… Relaxing time to enjoy the evening with my girls.
