Happy Friday, almost one full work week with THE fresh diet, now onto my first weekend…


Italian Style Scrambled Eggs with Fresh Herbs, Diced Tomato, Mozzarella Cheese & Seven Grain Toast

Love the herb flavor in my scrambled eggs this morning, it really added to the taste!


Antipasto Salad with Prosciutto Ham, Baby Arugula, Roasted Bell Pepper, Fresh Mozzarella, Tomato & Balsamic Vinaigrette

I have come to adore prosciutto and mozzarella!


Fillet of Salmon with Spiced Pomegranate Sauce with Cider Baked Sweet Potato with Red Currants and Exotic Mushroom Ragout

This meal was just a tad to “orange” lol I actually had to steam a few green beans to add.. 


Fillo Cup Stuffed with Guacamole, Black Beans and Corn

Not sure why the guacamole wasn’t “in” the fillo cups but I used them to “dip” and it was tasty either way.


Raspberry Cheesecake

Thursday September 27th with TFD

September 27th with THE fresh diet

Yesterday was a paperwork and bills kind of day… You know the kind of day I would usually be running to “pick” on things in my kitchen since working on bills and health claims make me a little uneasy these days… But I’m happy to say I did it! I stayed out of the kitchen except for when it was time to eat… a little difficult… but I did it! Woot woot!


Corn & Tomato Egg Bake with Monterey Cheese and Cantaloupe

Loved the eggs and fruit it was a great pick me up for the morning!


Sloppy Joe Sub on Whole Wheat Bun with Crunchy Asparagus & Fresh Marinara Sauce

This was always one of my favorite lunches and today was no exception.

Teriyaki chicken another meal you can’t go wrong with! However somehow my green beans were missing the walnuts & garlic-I just didn’t taste it, sorry fresh diet, maybe mine landed up in someone else’s dinner.

Wednesday September 26th with TFD

September 26 with The Fresh Diet

Yesterday was a great day as my daughter Sarah was here with her boyfriend Bryan and their pup Bernie but that made eating a little crazy as we were out running around in the middle of the day. Note to self, “don’t run around without eating lunch you will get a headache.”


Toasted Granola with Pineapple & Honey Almond Ricotta Cheese

I love the sweet and crunch of the granola with honey!! The pineapple adds a nice bit of sweetness too!


Asian Flank Steak on Whole Wheat Roll with Szechuan Style Slaw and Peanut Sauce

This is one of my favorite lunches, the meat is very tasty! It is very filling and I love the peanut sauce…


Mini Veggie Egg Rolls with Peanut Sauce

Fillet of Cod with Orange Tea Leaf Sauce with Roasted Butternut Squash and Steamed Asparagus

This was a good dinner for me this evening as my head was hurting and I didn’t want a heavy meal. The cod had a fresh taste and the tea leaf sauce added to the flavor. For my sweetness the butternut squash was great.


Key Lime Cheesecake

Key lime is one of my favorite flavors of TFD’s Cheesecake. However I wish that when packing my food up they wouldn’t put the freezer bags on top of this little box as it always seems to crack it somewhere.

Tuesday September 25th with TFD

September 25 on THE fresh diet

Day two back with THE fresh diet proved to be a very satisfying and tasty day, it brought back some of my favorites…


Asparagus & Cheddar Cheese Quiche with Fresh Pineapple

 I loved the sweet and savory meal! Loved the creamy quiche and the pineapple was sooo sweet!


Grilled Wild Mahi Mahi on Whole Wheat Ciabatta Bread with Lettuce, Tomato & Thousand Island Dressing

This is by far one of my favorite lunches from TFD! It is a good size and therefore very satisfying, I will admit I do add a few more veggies to it to really give it some zip I add red onions and for a bit more crunch a few cucumber.


New York Strip Steak with Mango BBQ Sauce with Spanish Style Brown Rice and Sauteed Mushroom Medley

I am a meat kinda gal so I always looked forward to my evenings with New York Strip. The piece was very satisfying although it does look small, again we are sooo used to looking through our “American eyes” which means our eyes are much bigger then our stomachs. The Spanish Brown rice had a little bit of zest and well we all know I love mushrooms. I must request the recipe for the Mango BBQ sauce to share with you because it has just the right bit of sweetness and yet has a good kick!


Mini Sweet Potato & Turkey Shepherd’s Pie

I have to admit today I wasn’t really looking for a savory snack, I wanted and craved my “sweets” but it was Shepherd’s Pie which did have sweet potatoes on top so I did get a lil taste of sweets.

I sooo look forward to watching the 8pm TV shows with my cup of tea and evening cheesecake… Relaxing time to enjoy the evening with my girls.

Monday September 24th with TFD

September 24 food for Shelley's THE fresh diet

Yesterday was my first day back with THE fresh diet. On Sunday I anticipated the arrival of the “little green bag” waiting for me next to my front door. And there it was when I came downstairs nice and early. This is one of the things that I love about THE fresh diet; it is fresh food delivered everyday to my front door. I mean how much easier does it get then that? No weighing, no measuring, no points to count, just open and eat… I’m not saying that this is a lifelong way to eat but for someone who wants to jump start their healthy eating for a while before you settle back into “life” it is a great way to start….. or for those pesty 10 pounds I hear so many people talking about take a month or two and just do it! And you know the food is pretty tasty too!!


Artichoke & Brie Cheese, Parsley Omelet with Seven Grain Toast

This is one of my favorite breakfasts from THE fresh diet, I love the creamy brie and the artichokes!!!


Santa Fe Style Salad with Monterrey Jack Cheese, Corn, Black Beans, Tomato, Jicama Bel Peppers and Romaine Lettuce with Ranch Dressing

I could not believe how much salad fit in my container!! I took the salad out to toss the dressing in one of my glass bowls and could not believe it filled the whole bowl up, and I’m talking lots of sweet jicama too! The cheese was shredded which is a good way to “spread the love” as it seems to give you more when actually it isn’t… And I do love how the dressing is real dressing not low fat stuff that just tastes nasty, it was delicious Ranch!


White Bean Hummus with Pita Chips

What’s not to love about hummus? Well maybe it seemed like a smidge in size, but after I enjoyed it with some tea it really was the correct amount, ya know how I knew? I wasn’t hungry!!! I always remember my old nutritionist who used to ask me “Are you hungry?”


Vegetarian Meatball Peperonata with linguine Pasta with Onions and Peppers. with Chipotle Whipped Cauliflower Puree and Herbed Barley Pilaf

When ordering my food this week i decided to try a few vegetarian meals so I could write about them for those who don’t eat meat. The meatballs did have a “meaty” consistency and they were rather good. But by far my favorite item of the meal was the chipotle whipped cauliflower. I’m going to have to get this recipe to share with you because it is delicious and makes a great alternative to white whipped potatoes!!


Pink Poached Pear Filled with Creamy Ricotta Cheese & Honey Roasted Walnuts

While waiting to juggle the remote between The Voice and Dancing with the Stars I enjoyed my pear with sweet ricotta cheese and a cup of tea it was a nice way to complete my cuisine for the day.

Another work out Wednesday has come and past! And now it’s time for a little “Shelley time.” And then back for some much needed cleaning…

Daily Cuisine:

Breakfast: Toasted Granola with Pineapple & Honey Almond Ricotta Cheese

Loved the combination of granola pineapple and ricotta cheese, it was sweet and crunchy and a wonderful way to start my day.

Lunch: Asian Flank Steak on Whole Wheat Roll with Szechuan Style Slaw and Peanut Sauce

This sandwich was another “finger licking good” sandwich, the flank steak was juicy and with the addition of the Szechuan style slaw and peanut sauce it was a tangy meal.

Dinner: Turkey Chili Con Carne with Whole Wheat Fettuccine Pasta and Steamed Asparagus

I wasn’t sure about this meal when I looked at it, I just wasn’t sure it was going to be enough to fill me up, however after eating it slowly and mindfully I found that I was quite satisfied with it. I do love chili on a cold night and the chili had the right amount of sweetness and zip.

Snack: Mini Veggie Egg Rolls with Peanut Sauce

Egg rolls used to be a favorite of mine. So I was happy to have these little veggie egg rolls for my snack. I think I’m overloading it with peanut sauce today though lol.

Dessert: Key Lime Cheesecake

Nothing like a little taste of sweet and tart to remind me of summertime.

The “fresh” life day 13 and 14

The week started with the ole “one two POW” of a work out with Danielle. I am always so thrilled with the way I feel after working out and knowing that my little muscles are getting stronger and stronger.

Daily Cuisine:

Monday January 16th

Breakfast: Artichoke & Brie Cheese, Parsley Omelet with Seven Grain Toast

What a great way to start the week and day with this delicious creamy omelet and toast.

Lunch: Classic Cobb Salad with Grilled Chicken, Turkey Pastrami, Tomato, Cucumber, Romaine Lettuce & Ranch Dressing

I have to be honest I was not a fan of today’s salad. I guess I am not a huge pastrami fan, it really seems to salty and fatty of a meat to me turkey pastrami or not it just didn’t sit right with me. Well I suppose there is always going to be something that we aren’t going to like right?

Dinner: Grilled Chicken Breast with Roasted Tomato Alfredo Sauce with Chipotle Whipped Cauliflower Puree and Herbed Barley Pilaf

Tonight’s chicken was plump and juicy and I loved the flavor of the Alfredo sauce with a kick and seemed to have some tomatoes in there.

Snack: White Bean Hummus with Pita Chips

I really enjoyed this extra creamy white bean hummus. Normally I would have eaten this with at least 5 pita chips so I was pleased that after taking my time to enjoy it I realized that 2 did the trick just fine, after all it is called a “snack” not a meal!

Dessert: Boston Cream Pie

I’m sorry I didn’t get a photo of this dreamy cake, when I took it out the chocolate stuck to the top and the rest was very hard to transfer to a plate but it was very delicious and creamy, loved the vanilla taste in the “cream.”

Tuesday January 17th

Breakfast: Whole Wheat Cinnamon Waffles with Fresh Banana & Pineapple Cottage Cheese

I toasted the waffles and they were so crispy and light, I loved the hint of cinnamon mixed into the batter. The Pineapple Cottage Cheese and Banana were just the right amount to fill me up.

Lunch: Grilled Wild Mahi Mahi on Whole Wheat Ciabatta Bread with Lettuce, Tomato & Thousand Island Dressing

This sandwich was truly finger licking good! The Mahi Mahi was very light and flaky. I toasted the bread and added some cucumber and red onion to the lettuce and tomato to make a wonderfully flavorful sandwich. One of my fav’s for sure!

Dinner: New York Strip Steak with Mango BBQ Sauce with Haricot Vert and Sautéed Mushroom Medley

Steak! I was so happy to have a dish which I really enjoy, I’m a steak kinda gal so this New York Strip was fork tender and the Mango BBQ Sauce was a great addition. Of course the Mushrooms and Haricot Vert were also quite tasty.

Snack: Mini Sweet Potato & Turkey Shepherds Pie

To be honest, I really wasn’t sure about this little snack, however upon taking my first bite and tasting the mixture of the sweet potato and turkey it was like a little thanksgiving in a bite size.

Dessert: Coffee Coconut Brownie

Divine, Delicious, Decadent… the 3 d’s used to describe the Coffee Coconut Brownie… No more words needed!

Yesterday’s meals had to be the golden day of my two weeks so far! I really have enjoyed the meals sent from THE fresh diet so far and look forward to what the next few weeks brings… How is your meal planning coming?

So what’s the skinny on THE fresh diet?


I love to cook, I love to entertain and I love to eat, sometimes I get confused between eating to live and living to eat, depending on what is going on in my life! I was well on my way with a healthy makeover in 2010 and then 2011 hit and pow I hit a wall, well not literally but figuratively it was just NOT my year and at the end of December I looked at myself and had a heart to heart and vowed to take back my life in 2012.

I jumped on THE fresh diet’s bandwagon and many of my facebook buddies have asked me what in the world is this and where does that delicious food come from? So I thought I’d do a post on the “skinny” of what I know so far about the company.

THE fresh diet is the next best thing to having a chef in your home who cooks healthy cuisine. I am NOT looking at this as a “diet” per say we all know I think that is a 4 letter word… however, I do hope to lose weight, inches and get back control while eating this food.

The company is based out of Miami, however my food comes from a kitchen in Brooklyn New York and is sent down every night on a refrigerated truck and then magically appears at my home each morning before breakfast. All I have to do is take it out of the refrigerated bag and put in the fridge until each meal time.

The calorie intake is between 1200 and 1400 calories a day, for women, which consists of Breakfast, Lunch, Dinner, Snack, and Dessert. Yes, I did say dessert! Which I believe is important so one does not feel deprived…

How is this all done you ask? It’s as simple as a click! All one has to do is go to their website and sign up. I called the company as I have a few pretty distinctive food allergies and wanted to make sure they could accommodate me. I had a great conversation with one of their sales team members and set up everything with her. However, it is very easy to get all set up virtually. You would enter your weight and height and from that point you would begin to choose what you would like for your meals. You have a choice of 4 options per meal, which I love. There is even a veggie choice for those who do not eat meat. Another cool feature that they offer is a “dislike” basket so if you have a food you don’t like or like me a food I’m allergic to you would put that in the dislike basket and if you attempt to order anything that has a smidge of that ingredient it will alert you! How great is that?

It’s as simple as that… so that’s the skinny! You ready to start and join me?

I love days when Sarah comes back home to visit for the day! Today was one of those days. We ran some errands that we needed to do and left for “someday” you know bring the watch in to change a battery, another take out a link, buy some needed makeup, and some Sunday “lounging” clothes for the little lady.

And of course heading out to eat was part of the day… This was a bit challenging for me because my food was at home, so I sat and drank my favorite The Republic of Tea Ginger Peach tea which was delish, but by the time we got home I was “hungry!” At that point it was “my” turn to eat and we all chatted around the table… life… work… running…goals… shortly after that it was time for Sarah to go “home,” well to her “new home” this will always be her home, and my stomach got that little wrench in it that it usually does as she backed out of the driveway and screamed, “I love you!” Man that gets me every time!

Daily Cuisine:

Breakfast: Exotic Mushroom & Feta Cheese Quiche with Fresh Apples

The feta in the eggs was extremely pronounced and added the slightest bit of saltiness. I loved the sweet contrast of the crisp apple slices.

Lunch: Citrus Glazed Grilled Chicken Salad with Romaine Lettuce, Hearts of Palm, Tomato, Pistachio & Honey Ginger Dressing

Loved the Honey Ginger Dressing! Little did I know when I was drinking my Ginger Peach tea how much “ginger” the rest of my day would have! Luckily for me I do like ginger and the extra snap that it gives! It was nice to have a few pistachio’s sprinkled on the salad for an extra crunch.

Dinner: Grilled Fillet of Ahi Tuna with Ginger Miso with Yellow Squash Tarragon Puree and Roasted Artichoke Hearts

This is the second week where I have had fish a few nights in a row, I do enjoy fish, however I’m beginning to feel like I do when I eat chicken a lot, you know like I’m going to sprout wings, so maybe like I’m about to sprout gills! lol The Ginger Miso sauce gave a huge amount of zest and flavor to the fish. The yellow squash was quite tasty however I didn’t really taste the tarragon, and the artichokes were big and fleshy which was nice to bite into!

Snack: Teriyaki Tender Beef & Zucchini Skewer

The skewers were very tender and I loved the delicate teriyaki flavor.

Dessert: Gingersnap Pumpkin Cheesecake

The day was completed with the ginger flavor in my cheesecake mixed with a little pumpkin; a taste of thanksgiving!

It was a work out kinda day preparing for Ryan! I bent and stretched and moved muscles that haven’t moved in I shudder to think months… maybe years… But knowing that with each hard breath I take I am getting stronger and stronger helps.

While shopping at the food store today, yes, I still have to do that, I do have a family who also has to eat even though my food is deliciously prepared for me. I checked out what some of the “new foods” were that I have tried over the past week. This was actually kinda fun to see what they looked like as I have previously looked over them not interested, or knowing what they were.

I also worked on my Wellness Makeover log to store all of my info in to chart my progress for the year.

New foods:

Swiss Chard: Beta vulgaris subsp. cicla), is a leafy green vegetable often used in Mediterranean cooking. While the leaves are always green, chard stalks vary in color.  Chard has been bred to have highly nutritious leaves at the expense of the root (which is not as nutritious as the leaves).  Chard is, in fact, considered to be one of the healthiest vegetables available and a valuable addition to a healthy diet (not unlike other green leafy vegetables).

Chard has a slightly bitter taste and is used in a variety of cultures around the world.

Fresh young chard can be used raw in salads. Mature chard leaves and stalks are typically cooked or sautéed; their bitterness fades with cooking, leaving a refined flavor which is more delicate than that of cooked spinach.

In my case it was the leaves that were cooked in with Oyster Mushrooms and Mozzarella in a Breakfast Egg bake on Tuesday.

Mango: The mango is a fleshy stone fruit belonging to the genus Mangifera, consisting of numerous tropical fruiting trees. The mango is native to India from where it spread all over the world. It is one of the most cultivated fruits of the tropical world.

Mangoes are widely used in cuisine. Sour, unripe mangoes are used in chutneys but they are typically eaten fresh.

The mango was introduced to me as it was part of the Caribbean Mango Sauce on my Grilled Mahi Mahi on Saturday. And again, on Tuesday in a Pineapple Mango Chutney with my Roasted Pork Dinner.

Rutabaga: The rutabaga, swede (from Swedish turnip), turnip or yellow turnip (Brassica napobrassica, or Brassica napus var. napobrassica, or Brassica napus subsp. rapifera) is a root vegetable that originated as a cross between the cabbage and the turnip. The roots are prepared for food in a variety of ways, and its leaves can also be eaten as a leaf vegetable.

On Tuesday evening’s dinner I had the Rutabaga mashed as a potato which is a common was it is cooked in Sweden and Norway.

Breakfast: Oregano, Zucchini & Mozzarella Cheese Quiche with Fresh Pineapple

Flavorful and full of zest and protein, what a great way to start the day!

Lunch: Mushroom Soufflé & Gruyere Cheese Panini on Whole Wheat Ciabatta Bread

I loved this little Panini, I have a Panini grill which I chose to warm it up and to make it extra crunch. I loved the flavors of the mushrooms and the gruyere cheese! This was a very enjoyable lunch!

Hors D’Oeurve: Roasted Tomato & Mozzarella Whole Wheat Bruschetta

Bruchetta is one of my favorite foods, however looking at the two pieces of baguette I was a bit skeptical because I usually eat ohhh, well let’s just say a LOT more than two, however, after taking my time to cut it up. *which I have never done. I enjoyed it very much; the mixture of zesty tomatoes and the mozzarella after being warmed for a half a minute was ever so tasty!

Dinner: Fillet of Chilean Sea Bass with Citrus Chipotle Sauce with Sun-Dried Tomato Couscous and Haricot Vert

I’m a Chilean Sea Bass kinda gal, I love the fleshy white meat of this fish it has such a delicate flavor, and mixed with this “pow” Citrus Chipotle Sauce was a great complement! And the sides of Sun-Dried Tomato and Haricot Verts were also very tasty. It was a very zesty meal!

Dessert: Apricot Cheesecake

As always a wonderful little treat to end my day and I added a few blueberries.

Getting everything back on track I know starts from the inside out, and it is a combination truly of body, mind and soul; I’m going to be doing a post on my Wellness binder to give you hits it you’d like to make one too.
