Breakfast of Champions

Breakfast October 1-8th was a wonderful way to start the month and each day!

Monday October 1: Smoked Salmon with Sauteed Kale and Leek Fritters and Lemon Cream

I love smoked salmon, I was raised on bagels and lox every Sunday before Sunday school so adding this brought back a piece of my childhood and made me smile, it was a creative New York type of breakfast minus the bagel, however, the fritters were pretty darn tasty!

Tuesday October 2: Pumpkin Apple Quinoa Oatmeal

I was introduced to Quinoa two years ago from my old nutritionist who tried to get me to try new things all of the time, so when I saw this item on the menu I thought “hmm,” and the pumpkin apple compote together was a great taste of fall! Loved this a winning breakfast for sure!

Wednesday October 3: Crust-Less Tomato, Basil And Quinoa Quiche

Quinoa again however to have it used as a crust-less quiche was *fingers in air, wonderful, and everyone knows I’m a tomato and basil type of girl.

Thursday October 4: Corn cakes with caper & chive cream cheese and smoked salmon

Another creative New York style breakfast but with corn cakes this time, just as tasty as Mondays, but today we had cream cheese and chives which i love so I’m going to have to say I think this day was the winner.

Friday October 5: Polenta Breakfast Pudding With Apple Compote

Another great fall type of breakfast. I love how Chef Weldon is mixing in all of the seasonal flavors.

Saturday October 6: Spanish Tortilla With Smoked Salmon And Grilled Tomatos

What a creative way to serve the tortilla, in muffin shapes, this looked wonderful plated and made me feel like I was eating breakfast at a spa… Ohhhh how I wish I was, but the cuisine was definitely spa worthy!

Sunday October 7: Smoked Trout And Corn Souffle With Fresh Grapefruit Wedges

I can honestly say I don’t think I have ever eaten trout for breakfast however it was very savory in the souffle.

That was the first week of the month and it was a culinary treat every morning, I can hardly wait to see what the rest of the month holds in store for me, napkins please…

 

Introducing Chef Michael Weldon

The Fresh Diet has a new member of its team, Executive Culinary Team, Chef Michael Weldon. As a Corporate Executive Chef and the Director of Research & Development for The Fresh Diet, Chef Weldon has been working tirelessly to roll out our exciting seasonal menu! A whopping one hundred and sixty new delicious menu items are available now!

Chef Weldon learned his trade at the side of world renowned chefs like Wolfgang Puck, Johnny Ferno and Alain Giraud and spent nearly three-years serving an apprenticeship at the Ritz-Carlton Hotel, where he was trained by Michelin Star Chefs in all aspects of fine dining service.

We will now be able to start our day off right with new delights like the Chef’s personal favorites, Persimmon and Fig Marmalade Stuffed French Toast with Turkey Bacon or Spanish Style “Tortilla” with Jamon Serrano and Grilled Tomato. I’m looking forward to the stuffed French toast for sure!

Chef Weldon recommends trying the Striped Bass with Ciopino Sauce, the Dijon Crusted New Zealand Lamb Rack or Spicy Grilled Lamb Burger Stuffed with Goat Cheese and Fresh Herbs in a Pita. Even though I’m not really a Goat Cheese kinda gal I might have to give this one a try…

During the colder months, the menu includes warm stews and soups like Lamb Curry Chickpeas and Cavolo Nero or the Shrimp and Chicken Gumbo with Quinoa and Okra. Scratch the shrimp for me unfortunately I would stop breathing… but it sounds delish!

Everybody’s favorite – dessert was not forgotten! Cherry and Chocolate Peanut Butter Cookies, Chocolate Cranberry Haystacks, and Chef Weldon’s own favorite, the Fig and Blue Cheese Tartlets with Caramelized Onions and Balsamic Glaze are just a few of the treats available now. A lot of these items sound more like something on the menu at Canyon Ranch so I am looking forward to tasting them out…

I’m going to be posting a little differently and writing only about the new and exciting foods weekly and splitting it up by meals… however you can check out my facebook for daily photo shots and comments from my kitchen! So bring it on Chef Weldon!!

I never chose to have egg salad as one of my savory snacks before but it was a nice change and i loved the shallots!!

Happy Friday, almost one full work week with THE fresh diet, now onto my first weekend…

Breakfast

Italian Style Scrambled Eggs with Fresh Herbs, Diced Tomato, Mozzarella Cheese & Seven Grain Toast

Love the herb flavor in my scrambled eggs this morning, it really added to the taste!

Lunch

Antipasto Salad with Prosciutto Ham, Baby Arugula, Roasted Bell Pepper, Fresh Mozzarella, Tomato & Balsamic Vinaigrette

I have come to adore prosciutto and mozzarella!

Dinner

Fillet of Salmon with Spiced Pomegranate Sauce with Cider Baked Sweet Potato with Red Currants and Exotic Mushroom Ragout

This meal was just a tad to “orange” lol I actually had to steam a few green beans to add.. 

Snack

Fillo Cup Stuffed with Guacamole, Black Beans and Corn

Not sure why the guacamole wasn’t “in” the fillo cups but I used them to “dip” and it was tasty either way.

Dessert

Raspberry Cheesecake

Yesterday was a paperwork and bills kind of day… You know the kind of day I would usually be running to “pick” on things in my kitchen since working on bills and health claims make me a little uneasy these days… But I’m happy to say I did it! I stayed out of the kitchen except for when it was time to eat… a little difficult… but I did it! Woot woot!

Breakfast

Corn & Tomato Egg Bake with Monterey Cheese and Cantaloupe

Loved the eggs and fruit it was a great pick me up for the morning!

Lunch

Sloppy Joe Sub on Whole Wheat Bun with Crunchy Asparagus & Fresh Marinara Sauce

This was always one of my favorite lunches and today was no exception.

Snack

Chicken Apple Sausage with Horseradish Dip & Cucumber Spears

 A great savory treat right when I needed it!

Dinner

Pineapple Chicken Teriyaki with Black Bean Orzo and Green Beans with Walnuts & Garlic

Teriyaki chicken another meal you can’t go wrong with! However somehow my green beans were missing the walnuts & garlic-I just didn’t taste it, sorry fresh diet, maybe mine landed up in someone else’s dinner.

Wednesday September 26th with TFD

September 26 with The Fresh Diet

Yesterday was a great day as my daughter Sarah was here with her boyfriend Bryan and their pup Bernie but that made eating a little crazy as we were out running around in the middle of the day. Note to self, “don’t run around without eating lunch you will get a headache.”

Toasted Granola with Pineapple & Honey Almond Ricotta Cheese

I love the sweet and crunch of the granola with honey!! The pineapple adds a nice bit of sweetness too!

Lunch

Asian Flank Steak on Whole Wheat Roll with Szechuan Style Slaw and Peanut Sauce

This is one of my favorite lunches, the meat is very tasty! It is very filling and I love the peanut sauce…

Snack

Mini Veggie Egg Rolls with Peanut Sauce

Not to much to say about these little lovies except YUM!

Dinner

Fillet of Cod with Orange Tea Leaf Sauce with Roasted Butternut Squash and Steamed Asparagus

This was a good dinner for me this evening as my head was hurting and I didn’t want a heavy meal. The cod had a fresh taste and the tea leaf sauce added to the flavor. For my sweetness the butternut squash was great.

Dessert

Key Lime Cheesecake

Key lime is one of my favorite flavors of TFD’s Cheesecake. However I wish that when packing my food up they wouldn’t put the freezer bags on top of this little box as it always seems to crack it somewhere.

Day two back with THE fresh diet proved to be a very satisfying and tasty day, it brought back some of my favorites…

Breakfast

Asparagus & Cheddar Cheese Quiche with Fresh Pineapple

 I loved the sweet and savory meal! Loved the creamy quiche and the pineapple was sooo sweet!

Lunch

Grilled Wild Mahi Mahi on Whole Wheat Ciabatta Bread with Lettuce, Tomato & Thousand Island Dressing

This is by far one of my favorite lunches from TFD! It is a good size and therefore very satisfying, I will admit I do add a few more veggies to it to really give it some zip I add red onions and for a bit more crunch a few cucumber.

Dinner

New York Strip Steak with Mango BBQ Sauce with Spanish Style Brown Rice and Sauteed Mushroom Medley

I am a meat kinda gal so I always looked forward to my evenings with New York Strip. The piece was very satisfying although it does look small, again we are sooo used to looking through our “American eyes” which means our eyes are much bigger then our stomachs. The Spanish Brown rice had a little bit of zest and well we all know I love mushrooms. I must request the recipe for the Mango BBQ sauce to share with you because it has just the right bit of sweetness and yet has a good kick!

Snack

Mini Sweet Potato & Turkey Shepherd’s Pie

I have to admit today I wasn’t really looking for a savory snack, I wanted and craved my “sweets” but it was Shepherd’s Pie which did have sweet potatoes on top so I did get a lil taste of sweets.

Dessert

Honey Almond Cheesecake

I sooo look forward to watching the 8pm TV shows with my cup of tea and evening cheesecake… Relaxing time to enjoy the evening with my girls.

Monday September 24th with TFD

September 24 food for Shelley's THE fresh diet

Yesterday was my first day back with THE fresh diet. On Sunday I anticipated the arrival of the “little green bag” waiting for me next to my front door. And there it was when I came downstairs nice and early. This is one of the things that I love about THE fresh diet; it is fresh food delivered everyday to my front door. I mean how much easier does it get then that? No weighing, no measuring, no points to count, just open and eat… I’m not saying that this is a lifelong way to eat but for someone who wants to jump start their healthy eating for a while before you settle back into “life” it is a great way to start….. or for those pesty 10 pounds I hear so many people talking about take a month or two and just do it! And you know the food is pretty tasty too!!

Breakfast

Artichoke & Brie Cheese, Parsley Omelet with Seven Grain Toast

This is one of my favorite breakfasts from THE fresh diet, I love the creamy brie and the artichokes!!!

Lunch

Santa Fe Style Salad with Monterrey Jack Cheese, Corn, Black Beans, Tomato, Jicama Bel Peppers and Romaine Lettuce with Ranch Dressing

I could not believe how much salad fit in my container!! I took the salad out to toss the dressing in one of my glass bowls and could not believe it filled the whole bowl up, and I’m talking lots of sweet jicama too! The cheese was shredded which is a good way to “spread the love” as it seems to give you more when actually it isn’t… And I do love how the dressing is real dressing not low fat stuff that just tastes nasty, it was delicious Ranch!

Snack

White Bean Hummus with Pita Chips

What’s not to love about hummus? Well maybe it seemed like a smidge in size, but after I enjoyed it with some tea it really was the correct amount, ya know how I knew? I wasn’t hungry!!! I always remember my old nutritionist who used to ask me “Are you hungry?”

Dinner

Vegetarian Meatball Peperonata with linguine Pasta with Onions and Peppers. with Chipotle Whipped Cauliflower Puree and Herbed Barley Pilaf

When ordering my food this week i decided to try a few vegetarian meals so I could write about them for those who don’t eat meat. The meatballs did have a “meaty” consistency and they were rather good. But by far my favorite item of the meal was the chipotle whipped cauliflower. I’m going to have to get this recipe to share with you because it is delicious and makes a great alternative to white whipped potatoes!!

Dessert

Pink Poached Pear Filled with Creamy Ricotta Cheese & Honey Roasted Walnuts

While waiting to juggle the remote between The Voice and Dancing with the Stars I enjoyed my pear with sweet ricotta cheese and a cup of tea it was a nice way to complete my cuisine for the day.

Living the fresh life Days 32 ~ 40

food photo's from February 4-12the, Days 32-40It is hard to believe that I have been “working” THE fresh diet for a month now! I am so proud of myself for sticking to it especially when “life” has come up as it always will and I didn’t deviate from “the plan.” Exercise, Healthy eating, working on driving and clearing up my panicking too. So cheers please!!

From this point on instead of photographing and reviewing food I have already eaten on THE fresh diet, I am going to journal new foods and review them, I thought this made more sense and apparently there are new items added to the menu’s weekly so there is still much to review.

New foods:

Lunch:

Seared Tofu Wrap with Alfalfa sprouts, Snow Peas, Watercress, Baby Lettuce & Soy Dressing: This will definitely be added to my “favorite” list. There was so much flavor and crunch, a mixture of sweet and savory nothing as great as that, except maybe balsamic vinegar LOL.

Grilled Fish Taco with Brocco-slaw and Creamy Jalapeno Cilantro Sauce: I had seen photo’s of this dish before and I couldn’t wait to try it! And I was not disappointed. The piece of fish was a nice size and the brocco-slaw and jalapeno sauce just made it complete. Felt like I was in California!!

Snack:

Balsamic Grilled Eggplant with Fresh Mozzarella & Basil: Balsamic Vinegar has to be one of my favorite additions to just about anything so when i tried this I had to add a little more and a zip of Truvia. Basil, Mozzarella, and Balsamic Vinegar-great flavor!

Chocolate Chip Bread Pudding: First of all to have something sweet in the afternoon was a pure treat! I usually get the savory snack. I was so excited to give this a try, I love bread pudding and yes i love chocolate chips, in fact I was so excited I forgot to take my photo until i was halfway done, ohh no! But I did get it before the last bite.. LOL yes, another favorite to add to the list!

Ginger Poached Apple with Mascarpone Cheese: Another sweet snack, not chocolate but the apples were sweet and delicious with a hint of ginger and a dollop of Mascarpone Cheese. With a cup of tea-wonderful afternoon treat!

Dinner:

Veal Cutlet with Port Mushroom Marsala sauce with Brown Rice with Pecans & Scallions and sauteed Button Mushrooms: It is so nice to try different meats when on a “healthy living makeover” sometimes it is easy to get stuck in the chicken and fish rut to the point where you’d think you were going to sprout either feathers or gills, so the change to Veal was a welcomed change. Loved the mushroom Marsala and extra sauteed mushrooms with rice, such a decadent meal I felt like I was eating at a restaurant.

Chicken Cordon Blue with Ham and Swiss Cheese with Nine Grain Pilaf and Roasted Cauliflower: I have a little confession to make, I have never had Chicken Cordon Blue… I know it seems like a dish a lot of folks have at parties, back in my day, but I always opted for the “other” dish. But I found this dish very flavorful between the salty ham and the creamy Swiss cheese it was a great filling!

Grilled Chicken Breast with Ginger Miso Sauce with Maple Glazed Turnips and Green Beans with Walnuts & Garlic: What a nice chicken breast! This was the first time in a month that I believe I had what looked like a whole chicken breast. Loved the Miso sauce but the real winner of the dinner was the maple glazed turnips, YUM!!
