Yesterday was the first day in what is going to be a very stressful week for me and my family. My husband is having surgery on Wednesday and I will be happy when this is all over! No food from THE fresh diet for me on Wednesday because it will be impossible to eat it at the hospital where we will be spending the whole day. I’m already “thinking” of what I will have to eat in place of my “fresh” life.
Breakfast: Hawaiian Style Oatmeal with Pineapple & Toasted Coconut Flakes
I knew I was working out with Ryan this morning and I guess I didn’t think about that when I was ordering my food because I usually try and get an egg dish for the protein, however, the oatmeal was so delicious!
Lunch: Thai Turkey Burger on Whole Wheat Ciabatta with Sauteed Bok-Choy & Peanut Sauce
This lunch goes up there on my favorites!! I really enjoyed everything from the meaty turkey burger to the peanut sauce and I added some lettuce and red onions for extra zip!
Dinner: Thai Coconut Curry Chicken with Bamboo Shoots and Broccoli Bits with Braised Baby Carrots and Oregano Broccoli Mash
I usually like curry dishes but tonight’s dinner had such a small amount of curry that it was almost extinct and the rest of the flavoring just didn’t do it for me.
Snack: Mini Zucchini Quiches with Cheddar Cheese
These little morsels were not only cute but very tasty, these are a must for a party appetizer!
Dessert: Pineapple Cheesecake
I’m going to have to stop commenting on the cheesecakes because there really isn’t anything more to be said, they are like a slice of wonder to end each day I have one!
