The “fresh” life day 13 and 14

The week started with the ole “one two POW” of a work out with Danielle. I am always so thrilled with the way I feel after working out and knowing that my little muscles are getting stronger and stronger.

Daily Cuisine:

Monday January 16th

Breakfast: Artichoke & Brie Cheese, Parsley Omelet with Seven Grain Toast

What a great way to start the week and day with this delicious creamy omelet and toast.

Lunch: Classic Cobb Salad with Grilled Chicken, Turkey Pastrami, Tomato, Cucumber, Romaine Lettuce & Ranch Dressing

I have to be honest I was not a fan of today’s salad. I guess I am not a huge pastrami fan, it really seems to salty and fatty of a meat to me turkey pastrami or not it just didn’t sit right with me. Well I suppose there is always going to be something that we aren’t going to like right?

Dinner: Grilled Chicken Breast with Roasted Tomato Alfredo Sauce with Chipotle Whipped Cauliflower Puree and Herbed Barley Pilaf

Tonight’s chicken was plump and juicy and I loved the flavor of the Alfredo sauce with a kick and seemed to have some tomatoes in there.

Snack: White Bean Hummus with Pita Chips

I really enjoyed this extra creamy white bean hummus. Normally I would have eaten this with at least 5 pita chips so I was pleased that after taking my time to enjoy it I realized that 2 did the trick just fine, after all it is called a “snack” not a meal!

Dessert: Boston Cream Pie

I’m sorry I didn’t get a photo of this dreamy cake, when I took it out the chocolate stuck to the top and the rest was very hard to transfer to a plate but it was very delicious and creamy, loved the vanilla taste in the “cream.”

Tuesday January 17th

Breakfast: Whole Wheat Cinnamon Waffles with Fresh Banana & Pineapple Cottage Cheese

I toasted the waffles and they were so crispy and light, I loved the hint of cinnamon mixed into the batter. The Pineapple Cottage Cheese and Banana were just the right amount to fill me up.

Lunch: Grilled Wild Mahi Mahi on Whole Wheat Ciabatta Bread with Lettuce, Tomato & Thousand Island Dressing

This sandwich was truly finger licking good! The Mahi Mahi was very light and flaky. I toasted the bread and added some cucumber and red onion to the lettuce and tomato to make a wonderfully flavorful sandwich. One of my fav’s for sure!

Dinner: New York Strip Steak with Mango BBQ Sauce with Haricot Vert and Sautéed Mushroom Medley

Steak! I was so happy to have a dish which I really enjoy, I’m a steak kinda gal so this New York Strip was fork tender and the Mango BBQ Sauce was a great addition. Of course the Mushrooms and Haricot Vert were also quite tasty.

Snack: Mini Sweet Potato & Turkey Shepherds Pie

To be honest, I really wasn’t sure about this little snack, however upon taking my first bite and tasting the mixture of the sweet potato and turkey it was like a little thanksgiving in a bite size.

Dessert: Coffee Coconut Brownie

Divine, Delicious, Decadent… the 3 d’s used to describe the Coffee Coconut Brownie… No more words needed!

Yesterday’s meals had to be the golden day of my two weeks so far! I really have enjoyed the meals sent from THE fresh diet so far and look forward to what the next few weeks brings… How is your meal planning coming?
